Melcii cu scortisoara si glazura din branza sunt pur si simplu irezistibile. Drojdia se freacă cu o lingură de zahăr până se lichefiază, apoi se amestecă cu 50 ml lapte călduţ şi puţină făină. Am obţinut în felul aceste maiaua, pe care o lăsăm puţin la crescut, la loc călduţ. Apoi punem în cuva maşinii de pâine…maiaua, ouăle întregi, restul de zahăr, laptele călduţ, untul care a fost topit şi răcit, în prealabil. Apoi adăugăm făina amestecată cu sarea. Setăm maşina de pâine pe programul special pentru frământat şi dospit, fără coacere… şi ne vedem de alte treburi. Altfel frământâm totul până obţinem un aluat elastic şi lăsăm la crescut la loc cald.</div>

După ce avem aluatul astfel crescut îl întindem pe masă şi cu sucitorul întindem o foaie de cam 0,5 cm grosime. Apoi ungem cu unt, presărăm zahărul şi la urma scorţişoara măcinată. Rulăm apoi pe lungime, foarte strâns. Altfel rulourile se vor desface la copt… lucru care mi s-a întâmplat şi mie, drept pentru care mie mi-au ieşit nişte melci şi nu rulouri… Aşadar formăm un rulou din care vom tăia bucăţi de 4 cm, cu aţa. Punem bucăţile într-o tavă tapetată cu unt şi făină, lăsăm puţin la crescut în tavă, la loc cald, cam 15-20 minute.</div>

Încorporăm un gălbenuş în două linguri de lapte şi ungem fiecare rulou pe întreaga suprafaţă. Apoi dăm la copt în cuptorul încălzit, până se rumenesc frumos.</div>

Când melcii sunt gata, cât sunt încă fierbinţi se toarnă glazura de brânză deasupra. Se lasă apoi la răcit şi sunt absolut mai mult decât delicioşi.</div>

Se decojesc merele si se curata de cotoare, se scobesc mijlocul merelor cu o lingurita, iar in interiorul fiecarui mar punem zahar si scortisoara. Dupa ce asezam merele in tava, le introducem la cuptorul incins in prealabil la 180 grade. Le lasam in cuptor cca10-15 min.<br />Intre timp preparam blatul:se freaca galbenusurile crude cu zaharul pana ce amestecul devine ca o spuma. Adaugam praful de sare si praful de copt stins cu lamaie si treptat turnam lingurile cu apa amestecand continuu. Cantitatea de zahar in reteta originala este de 15 linguri, dar tinand cont ca am folosit zahar si pentru mere, cantitatea ideala ar fi doar 12 linguri pentru a nu fi prea dulce. Se adauga faina si se amesteca incet cu o lingura iar la urma adaugam albusurile batute spuma. Se toarna compozitia peste mere si se introduce in cuptor sa se coaca</div>

Drojdia se dizolva intr-un castron, in apa calda si se lasa 10 min. Adaugi apoi zaharul, untul topit la bain-marie, sarea si 2 cani de faina. Se framanta, iar la nevoie se mai adauga din restul de faina pana cand se obtine un aluat moale, manevrabil si nelipicios. Se acopera vasul cu un prosop de bucatarie si se lasa la loc calduros, eventual pe calorifer. Daca e prea fierbinte caloriferul, pune un prosop peste el. Daca apuci sa citesti retetea asta pe timp de vara :), atunci pune un vas cu apa la incalzit, peste el o farfurie cu un prosop si peste toate vasul cu aluatul. Dai focul la mic si lasi asa, aluatul sa creasca pana isi dubleaza volumul, cam 20-30 min.</div>

La inceput se face o maia din drojdie, o lingurita de zahar, 100 ml apa calda si putina faina. Trebuie sa fie moale, nu de consistenta aluatului si se lasa la crescut aprox. 30 min. intr-o incapere calda. Eu pun toata cantitatea de faina intr-un vas si intr-o margine fac maiaua, peste care presar putina faina si o acopar cu un prosop curat (pentru a nu se depune praf, dar si pentru a se mentine caldura).</div>

Galbenusurile de bat cu 1 lingurita de sare, coaja de lamaie/portocala pentru accentuarea culorii si aromelor. Zaharul se topeste in laptele usor incalzit. Uleiul se va incalzi putin, atat cat sa nu friga mana la framantat. Aluatul se incepe a framanta dupa ce maiaua a crescut, incorporandu-se treptat galbenusurile, faina, laptele caldut, uleiul usor incalzit, esenta de rom, vanilia Se framanta timp de 60 min. Daca vi se pare ca aluatul nu este foarte moale mai adaugati putina faina. in functie de anotimp sau starea vremii aceasta are mai mult sau mai putin capacitate de absorbtie a ingredientelor umede. (Cand este gata, jumatate din compozitie se separa si se mai framanta putin cu 1 -2 linguri cu cacao). Se lasa la crescut timp de o ora, la cald, fara curent rece si acoperit cu un prosop sau folie alimentara.</div>

Cand este suficient de crescut se imparte in doua parti egale si se intind pe o suprafata neteda tapetata cu faina. Evitati uleiul care dupa coacere dauneaza. Pe fiecare se poate pune nuca si cacao, se ruleaza si se asaza in tava in care s-a pus hartie pentru copt. (Daca s-a adaugat cacao la framantat in jumatate de aluat, atunci aluatul simplu se da in jumatate, aluatul in care s-a adaugat cacao se imparte in jumatate, se intind foile punand partea alba si deasupra partea colorata, dupa care se ruleaza). Dupa cum doreste fiecare se poate rula, se poate impleti din doua sau trei parti.</div>

In tava se mai lasa la crescut tot 60 min, pana ajunge la inaltimea tavii, dupa care se unde cu un ou batut cu o lingurita de zahar (vanilat) si da la cuptor (preincalzit). La cuptor se tine 50 – 60 min. , in functie de cuptorul fiecaruia, la treapta 2,5-3 pentru cuptorul cu gaz, iar daca flacara pare foarte puternica in primele 10min. poate fi usor deschis cuptorul (max 5 cm). Puneti la copt tavile la mijlocul cuptorului.</div>

Se amesteca toate ingredientele umpluturii. Ungem tava cu ulei, impartind foile de placinta in 3 gramezi ( 3 foi in fiecare gramada ) acoperim cu foile fundul tavii peretii si restul sa atarne pe masa ( punem gramada de foi cu un colt in tava – acopera o parte de fund si pereti, urmatoarea gramada tot cu un colt pusa va mai acoperi o bucate de fund al tavii suprapunandu-se cu prima si ca acoperi peretele in continuare,ultima se va suprapune peste primele doua acoperind fundul tavii daca mai era ceva de acoperit si restul de perete al tavii ramas neacoperit) Ungem cu ulei de fiecare data locul unde se se suprapun 2 gramezi de foi. Punem umplutura O nivelam si acoperim “ciufulit”; cu partea de foaie ramasa in afara.. Ungem foile cu ulei si presaram susan. Coacem placinta 15-20 de minute in cuptorul preincalzit la 180 de grade.</span></strong></div>

Se amesteca toate ingreidentele pentru umplutura intr-un bol (galbenusul frecat cu un praf de sare si albusul batut spuma).P este branza se presara grisul peste tot. Amestecam intr-o cratita laptele, zaharul si uleiul pana incepe sa fiarba apoi dam la racit. Peste compozitia racita punem oul (galbenusul frecat cu un praf de sare si albusul batut spuma), bicarbonatul stins cu otet si amestecam bine. Punem faina treptat si framantam pana obtinem un aluat moale. Il lasam un pic la odihnit pana facem umplutura. Se amesteca toate ingredientele pentru umplutura de branza. Din aluat facem 2 bile si intindem doua foi, una o asezam in tava unsa si tapetata cu faina sau hartie de copt, peste asezam compozitia, deasupra cealalta foaie pe care o intepam cu furculita din loc in loc. Se da la copt 30 min la 165 C.</div>

Cernem faina, punem stafidele in rom si coniac. Punem pe foc laptele iar untul il topim pe bain marin. In castronul in care am cernut faina punem galbenusurile, zaharul, drojdia faramitata, scortisoara, cuisoarele pudra, iar laptele si untul treptat. (laptele si grasimea nu trebuie sa fie fierbinti ci caldute pentru ca altfel stopeaza cresterea aluatului). Treptat incorporam laptele si untul topit. Obtinem un aluat pe care il punem pe masa de lucru. Presaram fructele uscate si mai framnatam o data. Daca aluatul este foarte lipicios se ung mainile cu putin ulei in niciun caz nu se mai adauga faina. Ungem o tava cu ulei si punem si hartie de copt. Se ruleaza aluatul, se pune in forma si se uneste la capete. Se acopera cu un prosop curat si se tine la dospit. Aluatul il ungem deasupra cu galbenusul batut si il introducem in cuptorul incalzit pentru 40-50 minute. Se scoate din forma cand s-a racit complet si se pudreaza cu scortisoara sau zahar pudra.</div>

Se ruleaza aluatul, se pune in forma si se uneste la capete. Se acopera cu un prosop curat si se tine la dospit. Aluatul il ungem deasupra cu galbenusul batut si il introducem in cuptorul incalzit pentru 40-50 minute. Se scoate din forma cand s-a racit complet si se pudreaza cu scortisoara sau zahar pudra.</ins></ins></div>

Ingredientele pentru reteta Trandafirasi cu branza dulce si sirop de zmeura sunt pentru 12 portii. Se face o maia din drojdia desfacuta cu o lingura de zahar, 2-3 linguri de lapte si 1-2 linguri de faina. Se amesteca bine pana se formeaza o pasta. Se lasa la crescut pana isi dubleaza volumul, adica aproximativ 1h. Intr-un vas se cerne faina, se presara o lingurita rasa de sare, 1-2 linguri de zahar, 2 oua mici, coaja de lamaie si portocala. Se toarna maiaua peste toate aceste ingrediente si se framanta bine, adaugand laptele si uleiul, pana se desprinde aluatul de pe mana. Lasi la crescut la loc caldut si acoperi bine. Intre timp pregatesti umplutura de branza: amesteci branza dulce cu cele doua oua, zaharul, cam 200g si stafidele spalate si curatate de codite. Pregatim tavile. Dupa ce aluatul a crescut, se imparte in bucati egale. Se intind cu sucitorul, se formeaza cercuri, se taie raze, se aseaza umplutura si se formeaza placintele sub forma de trandafirasi. Se aseaza trandafirasii in tavi, se mai lasa putin la crescut (15min), timp in care se ung cu ou batut. Se coc la cuptor la foc potrivit pana se rumenesc.</div>

Intr-un bol se amesteca branza dulce impreuna cu laptele, uleiul, zaharul tos, sarea si vanilia. Faina se amesteca cu praful de copt si se incorporeaza in primul amestec. Se framanta putin pana se obtine un aluat moale . Daca vi se pare prea fraged mai puteti adauga putin lapte . Se intinde aluatul pe o suprafata presarata cu faina. Se taie in patrate de 12 X 12 cm . In mijlocul fiecarui patrat se pune o lingurita de marmelada. Pe margini fiecare patrat se unge cu ou batut . Se pliaza patratele formandu-se un plic si se preseaza bine cu degetele astfel incat marmelada sa nu curga. Se aseaza plicurile intr-o tava tapetata cu hartie de copt. Se ung cu ou batut. Scortisoara se amesteca cu cele 2 linguri de zahar tos si se presara pe plicuri. Deasupra se pun migdalele feliate. Se coc la cuptorul preincalzit la temperatura medie aproximativ 20 min pana cand isi schimba culoarea .</div>

La un capat se pune o lingurita plina de umplutura se aduce coltul opus peste si se merge in zic-zac pana la capatul fasiei. Se ung cu unt, se aranjeaza in tava si se coc la cuptorul preancalzit, la foc mediu(180°). Se face un sirop din 250 gr zahar+200 ml apa+esenta de rom+3 lg zeama de lamaie in care se scufunda trigoanele calde pret de un minut-doua.</span></strong></div>

Amestecam Quark-ul cu untul, zaharul, ouale si pe urma budinca. Impartim aluatul in 4 si intindem o foaie. Decupam cercuri, mai mari sau mai mici, dupa preferinte, si din restul aluatului facem spirale cat sa poata imbratisa cercurile. Punem in fiecare cuib cam 1 lingura de umplutura si deasupra o jumatate de caisa. La fel procedam si cu restul aluatului, se pot pune si alte fructe, eu am pus caise si visine. Le coacem la 180°C pana se rumenesc marginile.</span></strong></div>

Sucul scurs se amesteca cu smantana (smantana pt frisca).Se toarna amestecul peste banane. Se ruleaza si se da la cuptor pt 45 minute la foc potrivit (175 gr. ventilator).</div>

1. Se topeste grasimea si se adauga laptele. Se incalzesc. Temperatura = 37 grade C. 2. Se farimiteaza drojdia intr-un castron. Se adauga putin lichid (lapte + grasime) si se amesteca. Se adauga restul lichidului. 3. Se adauga zaharul, sarea, amoniacul (coaja de lamaie / portocala) si aproape toata faina, se pastreaza putina faina pentru intins aluatul . Se framinta aluatul. 4. Se lasa aluatul la crescut, acoperit, circa 30 min. 5. Se ia alatul pe planseta. Se imparte aluatul in 18 bucati. 6. Din fiecare bucata de aluat se fac suluri de circa 40 cm lungime, se da forma de covrigi 7. Se pun la crescut pe o tava cu hartie de copt. Se acopera si se lasa sa creasca circa 30 min. 8. Se coc in mijlocul cuptorului cam 8 – 10 min. 9. Se ung cu unt topit cind inca sint calzi. Se dau prin zahar.</div>

Reteta de aluat e postata de Afrodite aici. ALUATUL: 1. Se prepara o maia din drojdie, 1 lingurita de zahar si una de faina – peste care se toarna laptele caldut. Se lasa la umflat cam 10-15 minute. 2. Restul ingredientelor se pun intr-un vas (fara untul topit) se toarna maiaua si se formeaza un aluat, apoi adaug untul topit si racit incep sa framant. Nu e un aluat care sa necesite efort, eu nu-l framant mult, ci doar pana se leaga ingredientele. 3. Se pune intr-un loc cald la dospit, cam 1 ora. 4. Aluatul se imparte in 2 bucati egale si se intind 2 dreptunghiuri. Pe fiecare le-am uns cu cate 2 linguri de gem de zmeura si apoi am presurat fructele uscate pe care le-am spalat si uscat intr-un servet de bucatarie. 5. Le-am rulat cu ajutorul hartiei de copt si cele 2 tuburi rezultate le-am crestat pe mijlloc, pana in centru cu un cutit bine ascutit. 6. Le-am impletit si-am mutat cosita rezulatata, cu tot cu hartia de copt pe tava, astfel am evitat sa-i stric forma. 7. Cosita am lasat-o sa creasca 1 ora in cuptorul care-l incalzisem 10 minute la 50 grade, ca sa feresc aluatul de curentii de aer. Am copt-o timp de 18 minute la 175 grade Celsius.</div>

Drojdia se pune la inmuiat in putina apa si se lasa 5-10 minute sa se activeze. Dupa ce drojdia a facut spuma, se adauga mierea, oul (cum am spus, eu am facut portie dubla si de aceea apar 2 oua), scortisoara si se omogenizeaza. Se adauga laptele, uleiul si se adauga faina treptat pana obtinem un aluat elastic si usor de lucrat. Aluatul astfel obtinut se pune intr-un bol, se pudreaza cu faina, se acopera cu un prosop sau cu folie alimentara si se lasa sa creasca la loc caldut timp de 1h – 1h1/2 sau pana isi dubleaza volumul. Dupa ce a crescut, se intinde o foaie de aprox. 1/2 cm grosime si se taie patratele folosind un cutit ascutit sau instrumentul acela pentru taiat pizza. Se acopera din nou cu un prosop si se mai lasa sa creasca 20-30 de min. Cat cresc pernutele, se cerne intr-un bol sau pe o coala de hartie zahar pudra (nu stiu cat am folosit… cred ca am pus la inceput in jur de o ceasca si am mai adaugat pe masura ce se termina) si o lingurita de scortisoara. Dupa ce au trecut cele 20-30 de minute, pernutele se arunca in ulei incins pana se rumenesc frumos pe ambele parti. Imediat cum se scot din ulei se dau prin zaharul pudra amestecat cu scortisoara, avand grija sa le imbracam pe toate partile. La copt ele vor creste ca nebunele…Gata!!!</div>

Curatam merele de coaja,le taiem cubulete,le stropim cu suc de lamaie. Apoi le punem sa se caleasca in untul incins.le stropim cu rom si acoperim vasul cu un capac si le lasam sa mijoteasca 5 minute. Dupa cele 5 minute,tragem vasul deoparte si adaugam dulceata.o amestecam in compozitie si o lasam sa se raceasca. Intre timp punem cuptorul la incalzit.intindem aluatul de foietaj si-l taiem in patru,eu l-am taiat in 6 ca era mai mare. Punem merele amestecate cu dulceata in mijloc. Aducem colturile spre centru(cum se leaga bocceaua) si le lipim cu galbenusul amestecat cu o lingura de apa rece,apoi le lipim unul peste altul. Le punen in tava cu hartie si le bagam la cuptor la 210 grade .le lasam sa se coaca pana se umfla si se auresc. Eu le-am lasat cred intre 25-30minute.</div>

1. Merele se curata, scobesc de miez si se taie felii. 2. Intr-o cratita se topesc 2 linguri unt la foc mijlociu-tare, se adauga merele taiate felii si zaharul. 3. Lasati-le pe foc timp de 15 minute sau pana cand merele se caramelizeaza (la mine a durat cam 25 minute). Adaugati apoi scortisoara si vanilia. Lasati sa se raceasca. Intre timp se prepara foietajul. 4. Topiti untul la microunde. Ungeti cu unt o forma rotunda (cu diametrul de cca 20 cm) si asezati pe fundul ei o foaie de placinta unsa si ea tot cu unt. 5. Ungeti a doua foaie de placinta cu unt, apoi impaturiti-o in 2, apoi impaturiti-o iar in 3 (in final va trebui sa aveti o fasie lunga cat era latimea foii initiale si lata cam de 2.5-3cm). Asezati foaia in forma astfel incat sa depaseasca marginea formei cam cu 15 cm. Pregatiti si celelalte foi in acelasi fel si asezati-le in evantai, astfel incat marginile lor sa se suprapuna in centru. 6. Turnati compozitia in forma (pastrati cateva felii de mere pentru ornat). 7. Incepand cu ultima foaie pusa in tava, ridicati extremitatea fasiei, rasuciti-o delicat, deschideti marginea ca pe o floare si puneti-o deasupra compozitiei, astfel incat sa ramana in mijlocul formei un cerc cu compozitie neacoperita (diametru cam 8 cm). Repetati chestia asta cu toate foile. Asa arata cu toate foile pliate si desfacute ca niste trandafiri. Si ornata cu feliile pe care le-am pastrat inainte: 8. Se baga in cuptorul incalzit la 375F (190C) timp de 30 minute sau pana cand foietajul devine auriu. Lasati-o sa se raceasca. Se taie rece, ca altfel va curge compozitia de mere. Se pudreaza cu zahar farin (cand e rece, ca sa nu se topeasca zaharul) si se taie.</div>

Se încinge uleiul într-o tigaie nonaderentă. Se prăjesc ceapa şi usutroiul până se înmoaie şi sunt rumene. Se asezonează.</span><br style="font-weight: 400;" /><span style="font-weight: 400;">2. Se încinge cuptorul la 200° C/gaz 6. Se adaugă oregano şi chilli la mixul de pâine, apoi se urmează instrucţiunile de pe pachet.</span><br style="font-weight: 400;" /><span style="font-weight: 400;">3. Se întinde jumătate din aluat pentru a se potrivi într-o tavă de copt unsă cu ulei, de 30 x 40cm, puţin adâncă. Se aşază deasupra ingredientele, mai puţin ouăle şi parmezanul, asigurându-te că feliile de mozzarella sunt aşezate la intervale egale.</span><br style="font-weight: 400;" /><span style="font-weight: 400;">4. Se amestecă ouăle şi parmezanul, se asezonează şi se toarnă peste ingredientele din tavă, apoi se întinde deasupra restul de aluat. Se înlătură excesul de aluat şi se strânge partea de jos cu partea de sus a marginilor pentru a sigila ingredientele.</span><br style="font-weight: 400;" /><span style="font-weight: 400;">5. Se unge exteriorul cu oul rămas şi se crestează partea de deasupra de patru ori. Se dă la cuptor 50 de minute – se acoperă cu hârtie de copt dacă se rumeneşte prea tare.
